Intro to Winemaking Session I: You've selected your wine ...Cabernet Sauvignon. Nice choice! Fresh grapes have arrived from Chile. Each case of grapes weighs about 18 pounds…we’ll use about 750 pounds to make a barrel of wine. You will use a professional crusher-destemmer to crush the grapes into a ‘grape must’ for primary fermentation. Fermentation lasts 7-10 days... and entails the natural process of converting sugar to alcohol.
